Starbucks Copycat Gingerbread Loaf with Cinnamon Frosting

all-purpose flour

baking soda

light brown sugar

eggs

vanilla extract

molasses

hot water
Cinnamon Frosting

powdered sugar

heavy whipping cream

ground cinnamon
Instructions
Preheat oven to 350°F. Spray 8x4 loaf pan with non-stick spray.
Mix dry ingredients -- flour, baking soda, ginger, cinnamon, nutmeg, and salt in a large bowl. Set aside.
In another bowl, cream butter and brown sugar together with mixer until fluffy.
Beat in eggs and vanilla extract.
Combine molasses and hot water in a measuring cup.
Pour molasses mixture into the sugar/ butter mixture and beat until combined.
Slowly add dry ingredients to wet mixture and stir until just combined. Don't overmix.
Pour batter into prepared pan and bake for 60-70 minutes until a toothpick comes out clean.
Cool in pan for 10 minutes, then turn out onto cooling rack and cool completely.
Mix frosting ingredients until desired consistency. Add more cream if needed.
Frost the cooled loaf, slice, and enjoy!
