3cupsquick oats (you can use old-fashioned oats but they will be chewier)
Instructions
Melt stick of butter in large saucepan over medium heat.
Add sugar, milk and unsweetened cocoa powder. Continue stirring constantly over med-high heat until mixture comes to a rolling boil.
Once it's boiling, stop stirring and let it boil, untouched for 60 seconds.
Turn off heat and add peanut butter and teaspoonfuls of vanilla extract.
Stir in oats until completely incorporated.
Use a spoon or cookie scoop to drop cookies onto parchment paper or waxed paper. (I actually used a 1/3 measuring cup for bigger, more equal-sized cookies.)
