No-bake cookies. Boiled cookies. Drop cookies. Sometimes my family called these doo-doo cookies! What did yours call them? No matter the cookie slang, we can all call this no-bake cookie recipe delicious! These quick cookies are made in a pot with just seven ingredients that you probably already have on hand. You may need to buy some quick-cooking oats, but cocoa powder, sugar, milk and vanilla flavor are in most folks pantry. They make the perfect after-school snack when the kids walk through the door and raid the pantry. Surely that’s not just my kids?
Boiled Cookie Recipe (aka No-Bake Cookies)
Ingredients
- 1 stick butter
- 1/2 cup milk
- 2 cups white sugar
- 1/3 cup cocoa powder (unsweetened)
- 1 tsp vanilla extract
- 2/3 cup creamy peanut butter
- 3 cups quick oats (you can use old-fashioned oats but they will be chewier)
Instructions
- Melt stick of butter in large saucepan over medium heat.
- Add sugar, milk and unsweetened cocoa powder. Continue stirring constantly over med-high heat until mixture comes to a rolling boil.
- Once it's boiling, stop stirring and let it boil, untouched for 60 seconds.
- Turn off heat and add peanut butter and teaspoonfuls of vanilla extract.
- Stir in oats until completely incorporated.
- Use a spoon or cookie scoop to drop cookies onto parchment paper or waxed paper. (I actually used a 1/3 measuring cup for bigger, more equal-sized cookies.)
- Let cool completely and serve!

You can store these in an airtight container for up to a week (if they last that long!)

Can u use Splenda instead if regular sugar?
Here is a recipe using Splenda on Food.com. It got some mixed reviews but overall it looks like, yes, you can. You may have to freeze them to get them to harden up. Give it a try and let us know!
