Zucchini is loaded with Vitamin C, Vitamin A, potassium, folate, and fiber, but there’s only so many ways you can bake it, broil it, saute it or grill it until it starts to taste the same. But if you grate it up and toss it into a soft loaf of cinnamon bread, and it becomes the greatest way to sneak some vegetables into your kid’s mouths. Just try to ignore all that white flour and sugar they are consuming along with it.
Zucchini Bread
Makes 1 large or 2 small loaves.
Ingredients
- 1 ½ cups all-purpose flour
- ½ tsp salt
- ½ tsp baking soda
- 2 tsp cinnamon
- 2 cups grated zucchini
- 2 eggs
- ¼ cup apple sauce
- ¼ cup vegetable oil
- 1 cup sugar
- 2 tsp vanilla extract
- ½ cup chopped pecans optional
Instructions
- Preheat your oven to 350 degrees and prepare 1-2 loaf pans with nonstick spray (this recipe can make one large or two small loaves)
- In the bowl of a stand mixer, beat all wet ingredients until combined
- Place a sifter over the bowl, and add in your dry ingredients and sift into the wet mixture. Mix until combined
- Add in the zucchini and pecans and mix until they are incorporated
- Pour batter into your prepared pans, and bake for 45-50 minutes or until a skewer comes out clean
- Let cool in the pan about 10 minutes, and then remove to a wire rack to cool completely.
