I’m a big fan of breakfast. And who doesn’t love the thought of waking up to delicious pancakes for breakfast? I love this so much that I make these keto pancakes all the time.
And why wouldn’t I? They’re crazy good, crazy simple and a crazy awesome way to start the day.
If only there were a way to create some fat-free bacon as well…am I right?!
Gather up these simple ingredients and get started.
Ingredients needed for Keto Cinnamon Pancakes
- 3 Eggs beaten
- ½ c. Almond flour
- 4 tbsp. Coconut flour
- ¼ tsp. Salt
- ½ tsp. Baking powder
- 5 tbsp. Butter unsalted divided
- ¼ c. Heavy whipping cream
- 1 tsp. Cinnamon
- 1 tsp. Vanilla extract
How to make homemade keto pancakes
In a mixing bowl, combine the almond flour and the coconut flour.
Add in the salt, baking powder, and cinnamon. Stir the ingredients well to combine them.
Mix in 3 beaten eggs.
Stir in 3 tbsp unsalted butter and 1 teaspoon of vanilla extract.
Pour in ¼ cup of heavy whipping cream. Mix until all ingredients are well incorporated. Let the mixture set for 5 minutes.
Heat 2 tbsp of butter in a skillet over medium heat. Once hot, place ¼ cup of the mixture into the skillet and cook on both sides until browned and cooked through.
Top with butter and your favorite keto-friendly syrup.
